Classic thin brushwood

The brushwood according to the classic recipe turns out thin, crispy and amazingly tasty, while it is incredibly easy to prepare. Don’t be alarmed when you see vodka among the ingredients; alcohols completely evaporate at high temperatures, so even small children can use the cookies.

Alcohol will affect the structure of flour proteins, which is why, when frying, the surface of the “twigs” will bubble, and they themselves will become crispy rather than rubbery.

Required ingredients:

  • 2 eggs;
  • ½ tsp. table salt;
  • 0.23 kg flour;
  • 1 tbsp. vodka;
  • oil for frying.

Preparation procedure:

  1. For the dough, gradually mix all our ingredients. Beat the eggs with salt, then add vodka to them, gradually add flour. As a result, we get an elastic dough that slightly sticks to the palms.
  2. Wrap it in plastic and refrigerate for 40 minutes.
  3. For ease of rolling, we divide the dough into several parts, leave one of them, and return the rest to the bag. Otherwise it will dry out very quickly.
  4. Roll out the layer as thin as possible. The airiness of the future dish depends on how subtly you manage to complete this task.
  5. We cut the layer into strips, in the center of which we make a cut, and through it we turn out one of the edges of the workpiece. If you don’t want to mess around, then you can leave everything as is, the taste of the cookies will not change.
  6. After the pieces are cut, put the frying pan with oil on the fire. The twigs fry very quickly, so there is a risk that you simply won’t have time to put in and take out ready-made ones. We pour in such an amount of oil that our products drown in it. When the pieces fall into the boiling oil, they will begin to swell right before your eyes and take on all sorts of bizarre shapes.
  7. The finished brushwood should be placed on a paper napkin, towel or baking parchment, which will absorb excess fat.
  8. The dish is served generously sprinkled with powdered sugar.

Fluffy and soft on kefir - an ideal treat

The favorite cookie of Soviet children does not have to be exactly crispy; if you knead its dough with 300 ml of kefir and 3 cups of flour, we will get a whole mountain of fluffy and magically tasty pastries. You will also need:

  • 1 egg;
  • ¼ tsp salt;
  • vanilla packaging;
  • 3 tbsp. Sahara;
  • 3 tbsp. refined oil;
  • 1.5 tsp. soda

Cooking steps:

  1. We begin to beat the egg with salt and sugar.
  2. Pour cold kefir into a cup, add soda so that it begins to react.
  3. Pour kefir into the egg, add oil, stir again.
  4. Gradually add flour, stirring continuously. We get a soft, but slightly sticky dough to the palms. Cover it with plastic and let it brew for 30 minutes.
  5. Divide the dough into parts, roll out and cut into strips, each one is awarded with a cut in the center, and one of the edges is turned out through it.
  6. Fry in a large amount of oil, once ready, place on a napkin to remove excess fat.
  7. Sprinkle the still hot twigs with powder and hurry to put the kettle on the fire.

Crispy sticks and curls, the taste of which is familiar to many from childhood, can compete with popcorn, corn sticks, chips and other snacks. Sweet brushwood serves as an independent dessert that you can crunch on when the whole family gathers in front of the TV in the evening; it is also served with tea, coffee, and cocoa. In some supermarkets you can buy this delicacy, but it will not be cheap, and not every locality has a store or cafe that produces such sweets. But every housewife can make brushwood at home. The necessary skills are developed quickly, so even a novice cook can master recipes for making crispy dough figures.

Cooking features

Making homemade brushwood requires some culinary skill, but many novice housewives manage to make tasty and appetizing curls the first time. Even if the first experiment is not crowned with 100% success, do not despair: the second time you will almost certainly get the brushwood that you hope to get, that is, golden, crispy, and tasty. Knowing some subtleties will make the task easier.

  • To obtain crispy products, mineral water or alcoholic drinks are added to the dough. Sour cream, kefir, and cottage cheese allow you to make more tender, but slightly less crunchy cookies. Choose a dessert recipe in accordance with the result you intend to get.
  • The dough for making brushwood is rolled out thinly so that it is fried as quickly as possible, and folded in a special way. Usually, to do this, a layer of dough is cut into rectangles or diamonds, a longitudinal cut is made in the center, the ends of the dough are threaded into it and it is as if it is turned inside out. Other options are also possible. For example, a square piece of dough can be cut from the corners and one corner of the resulting triangles can be glued to the center. Another option is to cut the dough into strips and roll them into loose spirals. Using cookie cutters gives you even more options.
  • It is necessary to fry the brushwood in a large amount of preheated oil, each time removing the fried pieces of dough that have fallen off the brushwood. If a lot of products are fried, it is advisable to change the oil periodically. The quality of the oil also matters. Preference is given to refined vegetable products and always fresh, without rancid odor.
  • After frying, the brushwood must be placed on a napkin so that it absorbs excess fat.

Before serving, brushwood is often sprinkled with powdered sugar, honey or condensed milk. It is not advisable to process products with liquid products immediately after cooking, otherwise the brushwood may soften and stop crunching.

We put the dough in a bag and put it in the refrigerator for 20 minutes.

Roll out as thinly as possible and cut into small rectangles with a pizza cutter.

Making brushwood is very simple, just make a small cut in the middle and wrap one of the parts there. When half of the dough has been wrapped, let the deep fryer heat up and finish the rest.

The brushwood cooks very quickly, about a minute on each side. We place a plate with a napkin or a piece of newspaper nearby in order to transfer the fried twigs and drain off excess oil. Since the dough is not very sweet, each twig must be sprinkled with sugar. At first I wanted to pour powdered sugar into the bowl, pour in the twig and shake it, expecting it to stick with powdered sugar. Unfortunately, nothing worked, so I advise you to immediately do it through a sieve.

It turns out to be a fairly large bowl of fragrant and crispy brushwood! Bon appetit!

Once or twice, whatever you like. As you can see in the photo, the first two things on the right were twisted once, and the rest, I twisted twice. Adjust the length of the product yourself. It is determined based on the diameter of the pan. You should feel comfortable turning the cookies over while frying.

Heat the oil. The cookies fry at lightning speed, so don’t step away from the frying pan, otherwise you’ll end up with embers. To avoid tearing the cookies, place them on a board and bring them to the frying pan. Fry until equally golden on both sides.

In today's article we will tell you how to make a well-known and beloved delicacy - brushwood. There are several ways to prepare this delicacy, which are quite simple for home cooking, resulting in very tasty brushwood.
Let's get started.

Brushwood with sour cream

You will get very crispy sweets that can be prepared quickly.

You will need

  • about 3 cups wheat flour
  • one large spoon of sugar
  • pinch of salt
  • enough vegetable oil to fry everything
  • one chicken egg
  • half a small spoon of soda
  • three large spoons of sour cream
  • half a glass of powdered sugar

Preparation

  1. You should sift the flour. Beat the flour with the egg, while adding salt, sugar, soda, sour cream.
  2. Knead a very tight dough.
  3. Roll out the dough into three layers (layer thickness about 3-4 mm).
  4. Divide the dough layers into squares or rectangles. Make a cut in the middle of each figure. Wrap one of the corners of the figurine into this cut. Get a "twig".
  5. Pour vegetable oil into a frying pan and heat over high heat.
  6. Fry the twigs until they turn golden.
  7. Place the finished “brushwood” on a plate and sprinkle with powder.

You can also add lemon zest to sour cream to improve the aroma.

Brushwood with vodka

This recipe came to us from Italy, where brushwood is cooked with alcohol - this is how the sweets retain their properties and crispiness longer.

You will need

  • about 400 g sifted wheat flour
  • three chicken eggs
  • 50 g vodka
  • a pinch of table salt
  • vegetable oil
  • 50 g sugar
  • lemon zest
  • 30 g butter (butter)

Preparation

  1. Beat the eggs in a bowl.
  2. Add flour, salt, butter, lemon zest and sugar.
  3. Stir the entire mixture, then start adding vodka to the dough.
  4. Roll the dough into a ball and leave for an hour.
  5. Then roll out the dough into a huge thin sheet and cut it into rectangles. Fold the “twig”, as in the previous recipe, wrapping the corner into the cut.
  6. We begin to fry the brushwood in small batches.
  7. Place the finished sweets on a plate, wait for the fat to drain and sprinkle with powder.

Brushwood with yeast

For this recipe, it is best to use dry and fresh yeast.

You will need

  • about a glass of flour
  • dry (10g) or fresh (60g) yeast
  • ¼ cup of water
  • vegetable oil
  • one chicken egg
  • a couple of small spoons of sugar
  • pinch of salt
  • and powdered sugar

Preparation

  1. Melt the yeast in water and add flour to the mixture. As soon as a “mush” forms, stop adding flour.
  2. Separately from the flour and yeast, grind the eggs with sugar and salt. Then add the yeast mixture.
  3. Roll out the dough as for dumplings. Make small cuts in each piece of dough.
  4. We intertwine the pieces of dough into ribbons.
  5. Fry the dough.
  6. Place the finished “ribbons” on a plate and wait for the fat to drain. Sprinkle treats with powder

Brushwood with milk

For this recipe you will need batter.

You will need

  • 2-3 cups wheat flour
  • three chicken eggs
  • two small spoons of baking powder
  • 220 g granulated sugar
  • a couple of glasses of milk
  • ½ small spoon of salt
  • one glass of vegetable oil
  • ½ vanilla essence
  • 80 g powdered sugar

Preparation

  1. Mix salt, sugar, baking powder and flour.
  2. Beat the eggs into the dry mixture and add the milk and vanilla. Mix everything. You should get a fairly thick dough.
  3. Start heating the frying pan with vegetable oil.
  4. As soon as the pan is hot, start pouring out the brushwood. To do this, take a funnel and, holding it over the frying pan, pour the dough into stripes.
  5. Having poured all the dough in this way, fry the brushwood and place it on a plate.
  6. Sprinkle the treat with powder

Typically, brushwood is sprinkled with powdered sugar. If you want to use something different, chocolate frosting, honey, condensed milk or cayenne pepper would work great.
